Cream cheese bagel with barbeque carrots and dill

INGREDIENTS For veggies2 tomatoes, sliced1 carrot mincedCut dill leaves 1 tablespoon olive oil1/2 teaspoon salt1/2 teaspoon black pepper For bagels1/3 cup basil pesto6 bagels, split and toasted200gm Live Yum mozzarella cheese shreds1/2 cup basil leavesRock saltBlack pepper powder INSTRUCTIONS Preheat the oven to 200 degrees Celcius for 10-15 mins, depending on your oven. Place tomatoes and carrots on a baking paper and roast for 20-25 minutes, it should be juicy, not too crispy. Spread pesto on the bagels. Add the toppings alternating between tomatoes. mozzarella and basil leaves. Sprinkle with rock salt and black pepper powder before serving.

Mac n Cheese

Ingredients:300gms of dried macaroni1 cup peeled/diced potatoes1/4 cup peeled/diced carrots1/5 cup chopped mushrooms1/3 cup chopped onion3/4 cup water preferably use the liquid from pot of boiled veggies1/4 cup coconut milk100gm Live Yum Cheddar shreds1 tablespoon lemon juice1 teaspoon salt or more to taste8 garlic cloves1/2 teaspoon of pepper powder1/2 teaspoon of paprika Method: (Cooking, not baking) Cook the macaroni, according to package instructions, drain and set aside. Bring several cups of water to boil in a small pot. Place chopped potatoes, mushrooms, carrots, and onion in the boiling water, and cook for about 10 minutes, or until vegetables are tender and soft enough to blend.
