Cheesy vegan quesadillas with black bean, mushroom and red pepper


Easy Cheesy Quesadilla

bean filling:
-1/2 cup boiled kidney beans(rajma)
-1 tbs store bought salsa

mash the beans and mix the salsa

veggie filling:
-1/3 cup sliced mushrooms
-1/3 cup sliced capsicum (bell peppers)
- 1/3 cup sliced onions

sauté all the veggies in 1 tsp of any vegetable oil

Assembly

- Warm a pan on medium heat and put 1/2 tsp vegan butter or olive oil.
- Reduce the heat and place a tortilla on the pan, spread a generous amount of the bean filling, the sautéed veggies and add some Live Yum vegan mozzarella and cheddar cheese.
- Cover with another tortilla, press it down, place a lid on top to let the cheese melt.
- Keep the heat low, flip the tortilla and cover and cook till both sides are crisp. - Cut into triangles, sprinkle more cheese on top and serve with salsa.
