Creamy mushroom sandwich


 

This one is an all time favorite - it tastes so good, you won’t believe how easy it is to make! And, it's vegan!

 

What you’ll need:

For the cheese spread:

- 2 tbs Live Yum vegan cream cheese

- 1 tsp crushed garlic

- 1 tbs shredded fresh basil or (1 tsp dry basil)

- 1 tbs plant milk, if needed

Mix everything together well to make a smooth paste. Add plant milk if the cream cheese is thicker than you'd like it.

For the rest:

- 1 tsp oil

- 1 cup mushrooms

- 1 tsp crushed garlic

- salt to taste

- spring onions for garnish

Heat the oil, sauté the mushrooms and garlic for about 5-6 minutes till the mushrooms caramelize!

Toast the bread and spread the herby, cheese spread on it. Top it off with the mushroom mix and garnish with spring onions. Enjoy!
